B TOWN BBQ - Bathurst very own Texas BBQ & Southern Dining

B Town BBQ, formerly known as Piper Bistro, originated from a stroll down the streets of Vanuatu. While walking, the General Manager, Ash Lyons, noticed smoke billowing out of a pub. As he drew closer, the irresistible aroma of smoked meat filled the air. He struck up a conversation with the owner, who recommended a book - "A Meat-Smoking Manifesto" by Aaron Franklin.

This encounter transformed Ash's vision for the venue. Over the next 12 months, Ash diligently delved into the art of smoking meat, constructing a test kitchen in the adjacent bottle shop and acquiring a Yoder Smoker from Kansas.

With the invaluable assistance of Ash's close friend and confidant, Thomas Grasso, the concept of B Town BBQ was born!

Despite facing numerous setbacks, Ash and Thomas eventually found their rhythm and were able to craft an array of dishes that delighted their friends and family.

Once the menu was finalised, Ash embarked on an extensive renovation project to bring this concept to life.

B Town BBQ proudly opened its doors on September 1st, 2017.

From its humble beginnings to its current stature, it has continued to grow stronger each year, attracting both locals and visitors to Bathurst, as well as race enthusiasts.
